I use an Excel Spreadsheet that simple complies of Offencive formation, Defencive formation, who blitz, the result of the play ( i also have columns for WR routes, pass intended for) etc.
It really shows the tendicies of a defence and offence, also shows what works and what doesnt. Not to mention you can pretty much work out there AI from this (or atleast have a very good idea)

Me - I watch games and record which offensive plays teams ran in certain situations. Gives you an insight into their AI settings.
Offensive play recognition is pretty easy after some practice, will get tougher as new plays add to the playbook.
Full defensive calls are nearly impossible to be time efficient and be 100% correct.

What I do for a scouting report is I look at the team’s games (not including blowouts), and give some insight what we do best and what our opponents have done against us.
I generally do this for every game (except against CPU’s, should destroy them w/o a report). I also try to do this for my team at least once during the season when I scout my own team and at the end of the season.
In This case, this report is your team for season 8 + the last preseason game
RUSHING: 55%
FAR LEFT: 0 ATTEMPTS
LEFT: 2% (53/220/4.15 YPC))
MIDDLE: 35% (271/1805/6.66)
RIGHT: 53% (415/2223/5.36)
FAR RIGHT: 5% (41/254/6.18)
From these stats, we can interpret that you had very good success running the bal in any direction (except Far Left w/ 0 attempts). Although the best Yards Per Carry (YPC) came up the middle, the most rushes and total yards was found to the right (415/2223)
Looks like the carries were split between the 2 HB’s in a 55/45 split, with
HB Irun Darock (441/2721/6.62/340 bk tk) gaining the lions share of the yards. But
HB SAM I AM (312/1377/4.41) is no slouch either.
PASSING: 45%
