I was hoping someone might be able to give me an idea of what I should aim for? I am asking primarily about RT, but other line positions would be helpful as well.

I haven't touched stamina in like.. 10+ levels. You should be able to play ~55 plays/game and train on normal as a starter, in my opinion. mid 30s stamina should do the trick.

the answer for this isn't as obvious as it seems. an OT gains .5/level until 21 and about .375/level after that. So if your question is specifically about an RT, be careful about putting your stamina into the mid 30s early, as you'll end up gaining 10 stamina by lvl 21.
i believe the gains from leveling are much lower for G and C, so it won't impact your player as much.

My level 15 guard has less than 20 stamina, gets 40-60 plays per game as the starting RG, and has never dropped below 80 energy after a game.

i have a level 22 OT with stamina set at 45
his last game was set at hard intenseity and he got 61 plays with 13 pancakes and finished with 85 energy
i was quite satisfied

You probably only needed half as much stamina playing against a D-line that has no one higher than level 18.

You could have 10 stamina and get out of a game with 80+ energy if the sub-settings and rotation accomodate you. That doesn't really mean anything. What matters is in-game breath. Your performance will lessen much slower with higher stamina. That's really what matters, not how much energy you end with after the game.

Stamina should not be sacrificed at the cost of the "power" stats such as STR/BLK/AGI/SPD. You'll want to work on it at some point, but don't get too stamina happy.
I would say at most 5 points invested and two-three weeks of training should do any lineman good for their career.
