AND if you tag players individually, do you HAVE TO use the tagged defense in order for the tagging to work or can you tag individual players & then play a different type of defense (run focus, pass focus, balanced etc.)?

It does work, and probably better than the other Casual options if you aren't familiar with them.
Like Drewd said above, the tags only matter for the Tagged preset, the other presets don't react to tags.

The only team I see for you is a Semi Pro team..? Is that the one you're talking about? Presets are for casual leagues. If you're in a regular league, then you should be doing your own play calling, and using the defense play creator.
If you only want to use presets, do a casual team and save yourself a ton of flex and frustration.

As TJ posted, you can use GLB preset AI's and Tagged defenses outside of Casual... but they're very minimal in their effectiveness against those that build AI's for offense and defense.
