Is it possible to select different players to run my different plays? If I only want Running Back A to play on certain plays and Running Back B to play certain plays that seems a very basic coaching thing I should be able to control.

Not on Offense. Defense, yes - to a degree.
Customizing the Offense too much leads to way too much O in this game. Already we average 7-8 yard per play for Passing and 9-10 for Rushing.

You can control the Goal Line and Regular depth chart, but Goal Line only has inside/off tackle HB runs and a couple lol screens.
They didn't allow this in the game because "tagging" offensive players was one of the most time consuming parts of a DC's job in GLB Classic.
