Yeah it's to bad my Sophomore players are really good I did not know I could not coach them if I take them off at level 5 can I coach them next season or is it level 10. I am in my first year so I coach a rookie team now!

Your Sophomore players (if they are on a team) will continue to level up. They are a tier ahead of your Rookie team.
Next season, your team will be at the Sophomore level while your current Soph players will now be at the Seasoned level.
The tiers go Rookie -> Sophomore -> Seasoned -> Journeyman -> Professional -> Veteran. Veteran is the last tier, and if you boost they can stay there for a few seasons.
