Vague thread title, but: do defensive plays align with the distance tag of offensive plays, or with where the OC places them in the playbook?

They align with the tactics you have set. Nothing to do with the O calls, barring the number of WRs.

To your question, it's more the latter but that's not a perfect answer and may cause you more confusion later.
D plays correlate to the Defensive Tactics Matrix in terms of Distance (Short/Med/Long), and not the Offense play Distance tag, unless you use Direction (Inside/Outside) AND then they are drawn from the pool of available D plays based on the formation the O called.
It can be complicated.
