I know that high contracts on a QB give him +25 Heart and recover the chem of new players more quickly. What about other positions and established players with 100 Chem? Are there any benefits? What are the drawbacks of giving an established player with 100 Chem a Low or Medium contract?

+25 Heart isn't just for the QB, it is for all players.
So... helps with morale spiral issues and whatever other impact Heart might have on any player, but no other benefits if Chem is maxed.

The drawback of giving an established 100 chem player a low contract obviously is that you send him down to 50 chem as a high and if you went back to a higher contract after he would need to build that up again.

In other words, the higher you take your skills the more losing 50% of your chemistry is going to hurt your players performance on the field.
