Just getting into the game after playing GLB1. Are there any general guidelines to follow for making a player? More specifically a Free Safety.

For a FS, talk to your defensive coordinator about what they want you to do and train skills that let you do that.
p.s. This is pretty much true of any player at any position. Talk to whoever will be designing the game plans.

I have 2 rules when creating players:
1. Conditioning cap must be at least 50
2. If a skill related to any attribute is 25 and the attribute is not 1, reduce that attribute to 1 (25 is the minimum cap).
A few more pieces of advice:
Agility affects a sh*tload of skills
Confidence affects more skills you may assume at first sight
Speed truly only affects Sprinting and a minor role on Tech skills
Stamina truly only affects Conditioning and a minor role on Strength based skills
Awareness is important if your character needs a specific skill (any skill with Awareness, Pursuit, Snap Reaction and also plays a minor role on Accuracy related skills)
Since Agility and Confidence affect most skills as attributes, you want to invest into them. I recommend that you boost Stamina/Speed through Traits, that's the real power of Dread-nought and, specially, Workhorse. Investment in Awareness and Strength is really up to the needs of your position.
