What I mean is, does a player with 100 chemistry start to drop if you sign them to a low contract? If so, how much?

Max chemistry for a low contract is 50, so I would assume he drops down to that immediately upon signing a low contract.

It happens immediately, he drops right down to that as soon as you sign him to it like Larssen said.
