I'm new to GLB 2, is it the best to create a player on day 41 or no?

It doesn't matter here. You can create him today as an Experienced player and he will have the same XP as someone created at the beginning of the season. All you lose out on are the stats.

So if I created him today I wouldn't be forced to sign with a team until next season?

You're not ever forced to sign with a team. Player life and SP(exp) goes by games played.

If you want to make a player now, but not use him til next season, don't make him experienced. Unless you want him on a sophomore team next season.
