Why, not add an option to either start a group chat to invite people to so you don't have as many windows at bottom of your screen?

Because it's a lot more complicated than "just adding it".

It would basically require either completely rewriting most of the IM code or writing an entirely new batch of code from scratch.

Oh, yeah, it's a good suggestion. Just a lot of work. It's on the backburner for now.
