my guys always look like theyre smacking it down, are they getting PDs or is the WR just dropping the ball because he is scared?

Three different results.

QB Elvis Grbac threw a pass to WR1 Jack Michaelson, who was unable to secure the ball due to nearby defense.

QB Matty Mack threw a pass to WR1 Jack Michaelson, but the ball was batted away by CB1 Yes Man II: Who dat?.

QB Elvis Grbac threw a pass to WR1 Jack Michaelson, who dropped the ball!

My thoughts - Case 2, the CB got a deflection before the WR could get to the ball. Case 3, it was an uncontested catch roll that the WR just botched. And Case 1 is a contested catch roll that was failed - interpret that as you like, but basically it was a contested roll between the WR and the CB and the CB won. At least, that's sort of how it worked in GLB Classic and I assume it's similar here. The under the covers stuff may be vastly different, but that's got to be the basics of how it works, given that CBs have a "Deflection" skill and WRs have a "Catch in Traffic" skill.

I mean, I'm guessing, I don't have any real inside knowledge or anything, but given what we know, seems likely.

Yeah, the way I looked at it (my interpretation only):

Skill - Receiving Hands - Catch the ball (no drops!)
Skill - Catch in Traffic - Catch the ball when defenders are present (no drops due to defender near!)
Skill - Receiving Grip - Catch the ball when being tackled (no knocked loose passes after the catch!)

Skill - Deflecting - Prevent the WR from getting a good chance at the ball
Skill - Intercepting - Catch the ball as a defender
Skill - Power Tackling - A good hard hit might help knock the ball out

Skill - Balance - A good balance roll will allow you to make the catch without falling or being unable to turn, also makes you less susceptible to being hit after the catch, could reduce KLs
Skill - Vertical - Good for defenders in underneath zones and for WRs to make the catch when the ball is thrown high or is contested
Skill - Diving - Good for making diving tackles or diving catches

Curious if CiT is the only roll for catching in traffic or if you have to pass a CiT roll then a RH roll.

'unable to catch the ball due to nearby def': is it because you did not have enough catch in traffic or enough receiving grip? that's the part i'm confused on.

Receiving Grip should only effect your anti-knocked loose stat. (I believe)

yes, that makes more sense. i looked at the def stats and i did not see a KL stat, but when checking the replays, i do see where knocked loose is a part of the game. i guess it is catch in traffic.
