I thought this was an interesting replay from Sumatra's game today:

It doesn't say 'deflected by' in the pbp, but you can see the ball clearly change direction in the replay...

Yeah, it never does for an INT.
Also lots of times the ball is deflected multiple times but only the last one to touch it gets credit.
