How does the DAI behave on a 2 and 2.5 if you are set for 0-2 then 3-5?

Since it reads top to bottom, you can set them to 0-2 & 0-5. Then you won't have to worry about any accidental holes if you change them later. Plus, if you want to make a change later, you only have to change 1 input instead of 2.
