I don't understand whether Offensive Linemen are supposed to be just plain bad. The highest number of pancakes any of my offensive linemen ever got is just around four or five, and the lowest level ones I have are lv. 11.

Don't worry about pancakes. Watch games and see if your linemen are holding their blocks, as that's what matters to offensive success.

Thanks. I was really worried about whether my players were actually worth the flex points I spent on them.
