Just curious as to what other more experienced GM's do here? Do you usually turn this off and stick with your settings?

Depends on the team/specific game. And how casual you are about winning, I guess. If the team requires a certain game plan to have a chance at winning, then yeah you lock it down and make it dance to your drum. But if you're playing a soft team or just don't care, then you can let the CPU muck around with your plan.
Really it's only supposed to deviate if your plan isn't working, so some would say, if your plan isn't working neither will the CPU's plan, or yurnotdoinitrite.
