Depends what you want to do and what your team is like.
But defense is set up largely based on scouting teams. What are their tenancies? Figure that out and stop them. So if they run 70 % and pass 30% - that's how you set it. If they run inside 20% and outside 80% then that's how you set it. OR maybe they're 20/80 but you figure you can handle the inside runs but the outside will kill you, then defend 100% outside runs. Etcetera.
As for offense, try different settings during pre-season. Find out what you strengths are. Can you deep pass like nobody's business? Then that'll mean you put a higher percentage into your deep passes - just keep in mind that that'll give the DLine/blitzers longer to get to your QB.

Defensive tactics are 95% inaccurate/useless1!
Only blitz % works. All pass D, run D, outside/inside, short, medium, long is in the same retarded boat. The D Ai in Basic does its own thing no matter WHAT you put in there. Try setting a 100% strong side or weak, it will end up 50% even if its a blowout, or a close game.
As for the O, as long as your not losing by more then 7, its about 75% accurate to your gameplan, there is definately more control there!

The "Automatically Adjust In-Game Strategy to What's Working and away from What's Not Working?" - if you're REALLY serious about the way you've set your offense, like 100% rush outside strong-side, and you know that if you run anywhere else, you're toast, then set that setting at "No, stick with my settings" and the "Auto Adjust Intensity" at "0" - you may get one maybe two obvious deviations (e.g., not running on 4th and 23) but otherwise, it'll stick to your plan.
Oh, and I've only used it once so far, but it appeared as if the QB Spy Tactics actually worked. I used the SS because I was on 100% run defense anyway, so the safety wasn't going to be covering any passing plays anyway - plus safeties tend to be strong and fast, which is good for stopping a rushing QB.
