....our backup center has double the pancakes with less of all those....but with stonewall more and vision and confidence more....could those be the reason???

It's probably because your backup C is matching up against their backup DT, or the backup C coming in fresh off the bench can more easily overpower a tired starting DT.

Well, I went and compared the two of you. The main difference is in the two huge blowouts that center had way more plays and hence more pancakes than yours did. Does he also have more stamina than yours?

I have found Stamina and confidence to play a bigger role than most give credit in the pancake department, especially stamina.

if you compare blowout adjusted stats, the pancake numbers are about the same - plus he is backing up LG and RG, so he probably gets a fair number against LBs
