All of the archetypes for CB's have a maximum height of 6'3". Does that mean that my CB can not choose an archetype? I also have problems with other players that I have that can't meet the height and/or weight restrictions. One of my players is one pound less than the minimum weight restriction.

Height/weight restrictions will only apply to newly-created players. You don't have to worry about your guy's height when switching from the old type player to the archetype.
