How high do people recommend boosting speed for a LT? 60? 68?

I'm not sure about higher than 60, but spd up to 60 is definitely very useful. I do not regret taking speed from 49 to 61 at all.
and I have actually been considering taking speed up to 68.

I can. In fact I have 68.6 speed on my OT and it will train over to 69.6 with the next training. If you get a 120 speed DE lined up way outside, you better be able to get into position. Personally, I think by level 56 you should try to have 95+ blocking, 80-85 strength, 80 agility, 70 speed, and 61 vision on your OTs.

Yeah speed to 61 (thus 62.5 with fill-bar) is pretty much a given for every position on the o-line
I've never seen a problem with speed on the edges. Bort has basically come out and said DEs don't even get to top seed when pass rushing, so 120 speed DEs are just a waste anyway I'm playing with 56 speed in EE AAA with little problems (I admit awful first build), but I haven't faced any pro quality DEs probably, so I dunno.

I've seen a 97 blocking, 81 strength, 81 agility, 56 speed, 55 vision OT get beat multiple times this season. Don't know if it is the lack speed, vision, or something else but I personally think it is the speed.

I'd guess the strength. The break block rolls are based on strength and agility, as per a million Bort quotes in the last 36 hours.

You have to engage in a block for it to be broken

You can get by with 55 speed but you will still give up a couple sacks a season to the top speed rushers. But I don't know if it's a given that 61 or even 68 will help because sometimes OTs just do stupid shit.

True they do some crazy stuff. Although the only sack I've seen my OT give up (if you can say he gave up the sack) he let the LG try and handle the RDE 1 on 1 and went to try and help block the LDE
