Okay, here's the question. What makes a Center a longsnapper? Do you train up passing, since longsnapping is basically passing the ball through your legs? What are the key differences in this game between a regular C and a longsnapper?

I don't think they've done anything with it yet...probably would be best off putting a tackle at LS, since they a)can block b)tend to be the fastest lineman and c)tackling is a minor.

tackling is a minor for all olinemen. OT get the largest boost from their minors though.
the key difference in this game between a regular C and a longsnapper is the C is on the team that is receiving the ball, and the longsnapper is on the team that is punting the ball. This is important because on replays, the C on the team punting the ball used to show up with the wrong color dot.

So, basically, you might want to put a DT there? Is that what you're saying?
Also, does the guy need a throwing skill, since snapping the ball is passing the ball through his legs? Or does it just not matter at this point?

Botched snaps and blocked punts aren't implemented. You're better off just putting people who can cover the return and tackle on the punt team.
