My play book preset keeps switching to balance even when I change it. Also my defense tac keeps changing to all out blitz even though I switched it to man.

On your team page, you should have a Yellow box just to the right of the scheduled game window. "Edit Game Tactics".
When you click on it, it should open up a new window listing your Default Tactics first and then each game (on the left). The tactics options are listed across the screen to the right.
Use the drop down menus to select which Playbook & Tactics playbook you want as Default.
Then hit the yellow box again to close and save your selections. The yellow box should now say "Hide Game Tactics".
Then refresh your team page and open up the yellow box again and you should see the Default selection is whatever you chose above.
Does this not work? What exact steps are you taking? Are you on your phone (mobile) or PC?
