Believe it or not, route tech can play a small part in messing up cutbacks like that - 35 isn't a bad amount in it though for a possession guy, I'd always prefer 40+ but it's pretty close.
Footwork is how you 'adjust' on a pass when working back to it or running under it, 30 is too low for any receiving position. Quickness is how fast you can spin once stopped or slowed - like a cut for a turn, and how fast you can accelerate in a straight line. Footwork helps you make adjustments to where you are running, like when the pass is slightly off target. Sometimes it's hard to see small inaccuracies left and right because of our view of the field. It's likely he needed to make a large adjustment with limited footwork and the SS was able to get in there and bat the ball away as he was attempting to secure it. The way the ball moves quickly away after contact leads me to believe the SS did get a hand on it.
You've got the main parts down of a possession player though. Those are the big 3 you mentioned. Just footwork is also required on a moderate level.Which is weird because I see frequently see great WR's and TE's with really low footwork, quickness, and route tech levels.
