I'm not sure how / if I can view the skills of my cpu players to be sure the best man is starting. Also, can I change cpu player names? Thanks for the help.

You can't see their skills. A lot of people have suggested this be changed, but it has been ignored.
You can't change their names either. You can cut them and sign other CPUs though.
The best you can do is to start CPUs based on their traits.
