2 S* DEs is a nice concept when you are building a team from scratch, but pretty tough to recruit after the fact.

Thee's a lot of good info in this thread. I've been around over a year now and had some good success on defense so I'll throw in from my experiences...
I've prob not ran the optimal set up, but I have done well with 3 DE, 3 DT (one star), 4 LB (2 stars), 5 CB, 2 SS (1 star), 1 FS. With the DT's and DE's I have used a combo, one run, and one pass rusher. LB's I use a speed guy, combo, pass and a utility guy. CBs have 2 pass with slight run, one pure pass, and 2 run slight pass. One SS star, and one who is balanced. The FS is balanced. I run 2 to 3 depth charts based on who I'm facing and use rotations, with some guys who can play different positions when needed despite the OOP penalty. It worked with my style, but I'm always up for improvement. I think my next incarnation of the team will try to run 3 star LBs, so some adjusting will be in order.

I just looked at your Defensive roster. A DT costs about the same as a SS.
You have 3 DTs (including the S*) costing $6.684 million: $3.73, $1.67, $1.284 (1 tier lower)
You have 1 SS (non-S*) costing $1.73 million.
Most of the top owners/co-ord/recruiters would much rather trade the 3rd DT for a 2nd SS. The equivalent tier price is $1.67 compared to $1.73. That's virtually a wash in terms of cost.
2nd SS > 3rd DT. It's not even close.
Again...it depends on your defense. A SS is not as important in a zone defense as in a man defense. He isn't required to cover the TE so his coverage skills don't need to be very high. He just needs to be fast and have tackling skills/pursuit skills.
And a 3rd DT is very important in a defense that runs mainly 4-4 and 5-2 vs run and balanced teams.
You cannot just plag-in value numbers. You need to take the more important player/build for your defense.

Xars, I'm curious what changed your mind about DTs. If I'm understanding correctly you're a lot lower on DTs now than you were in the past. I remember this thread:
http://glb2.warriorgeneral.com/game/forum/thread/5241187
When balancing out my roster/budget I referred to some advice in that thread, including yours. What led to the change of thought? Or is it apples and oranges here, where you're arguing having 3 DTs vs. superstars in that position?

My DT comment in that thread:
DT - a Peter Griffin build - where you are a Combo Pass Rusher and Run Defender. The 80/80/80/80 build. This allows you to run a team with just 2 DTs - the other being a pure Run DT. Allows you to play a 4man front for Run D and 3man fronts for Pass. The real benefit is against Balanced teams as you'll be able to defend the Run and Pass well with one player on the field all game.
I was suggesting 2 DTs (S* and Run) then. I was suggesting 3 DEs (S*, Run, Pass).

Ok, I'll assume your correct for the moment since I don't run Zone D.
But here's my question:
Through the first 5 games of S17 against Medium Passes, your Zone D has the following stats per GLB2Scout
Comp% of 69%
Big Gain% of 41.4% (remember anything above 40% results in 82% First Down conversion which is elite O)
First Downs+TD conversions (similar to Big Gains) is 46.46%
YPA of 8.2
YPC of 12.0 (the more important number given the Big Gain%)
So is this equivalent to your expected season-long performance? If not, why will it get better?
Because when I look at the plays you are facing, your Opponents have been idiots and you still have bad overall results. I saw 5 (10%) 3WR TRIPS formation plays. That's what kills your Zone. Everyone is running Singleback/Shotgun. Against you, they should just be spamming TRIPS and over-flooding your weak side zones. Let CB2 sit and eat a picnic.
Against 3WR, your Big Gain% is only 22.9% versus the overall at 41.4%. Just imagine how bad your overall Pass D numbers might be against the right 3WR Passing plays.
Are you sure you need a 3rd DT and not someone who can help against the Pass?
