So at the end of this season, I'll have my first generation players finishing their 2nd season in Vet. My question is, when do I need to career boost them before they hit legend? like I might want to keep a couple, but I'm just not sure, could I hold on to them (not on a team), and then if I need them, Career boost them when I sign them to a team.

They need to career boost before playing in their 60th Vet game (assuming full boost). Anytime before the final ladder game of the season. Once that ladder game is played, they're Legend.

Yep.
If there's a chance you want to keep the player around, do 1 career boost. The other can be done at any time before the 75th game so no hurry.

Basically, you can't boost yourself out of Legend status. So you have until the last game to decide.
