If I were to create a player today would he have the option of "catching up" when offseason comes or would he be relegated to being a rookie at the start of next season?

The option to create an experienced player is not available now. Would be a lvl 0 rookie. I would imagine that a player must have some experience to "catch up".

I created a couple of QB's earlier today and they got in some games today and gained SP. I'm hoping since they are no longer fresh rookies I can use catch up and make them sophomore. So yes, I had the same thinking as you jfbueno. If it really does work, you are running out of time though.

Good call. I'll go ahead and sign them to a cpu team that still has to play. Hopefully it works but we'll see.

If I remember you won't be able to sign with rookie teams

I don't want to sign with rookie teams. I wanted to make players for my team that is being promoted to sophomore.

Catchup should be active on them if they were on a team and played one game.
