What's the best way to avoid offensive players playing defense? I've set up a two and in some positions three deep depth chart for defense yet I am still seeing offensive players play several plays on defense.

If everyone on your depth gets called to play other positions on a given play, then it will default to using the next best available player, which is sometimes an offensive guy.
On plays that it happens, look at the rest of your defense. Are all the players you have slotted in depth for that position already playing elsewhere on that given play?
Depth Chart management is certainly a key thing with any team and can really, really change how well a team will perform.
