I presume that Coverage Tech for Zone Defenders is still worthwhile as it applies to the time a zone defender is covering a receiver moving through his zone.

Is this correct?

I don't have any D players but I'd assume if there is also a 'Zone Tech' attribute that they are different things, or the same things that fire at different times
Edit: If not then they are probably the same thing

There are Zone Coverage and Man Coverage (which are mutually exclusive) and Coverage Tech (which applies to both Man and Zone Coverage).
