...but how come offensive lineman with vision 50+ still commit false starts - while guys with pretty low vision (25) don't if they are not overmatched?

From what I've seen, on both sides of the line, low in-game morale is the factor most likely to trigger penalties - while vision helps to get the perfect jump on the snap. Of course... if the blocker always gets off the snap late, he's likely to feel overmatched.
