So my question is does your players height and weight matter at all?

Not too much. It's always better to have a realistic size (See my Lv 35 OT), but it doesn't really make a noticeable difference.

It matters a little tiny bit. So any advantage is good, even if it's microbial. Try to get the tallest fattest o-lineman you can. tallest receiver, biggest running back, if you're going for a power back, ect...ect...

Ignore height and weight when you are re-rolling. Concentrate on the primary attributes. These values are much more important than the player's size.

So in summary, you want a good height, weight, and primary attributes (i.e. Str / Blk). You can continue to roll until you have the player you want.

I hope height / weight don't matter too much as my guy is one of the puniest linesmen out there! I guess though that any decrease in Str he has for being thinner, there will be a similar increase in Agi. However, it must surely be better to be a fat bastard (only by 1-2%) when creating a linesman.
