I mean, the 5-2 depth chart is even exploitable to insta-sack the QB. Just line up a fast safety or something at DT1 and boom, all weak-side pitches get insta-sacked.

Yes, but then all of your opponents will have likely have Gold Shed Block.
The only way Gold SA's really benefit an offense is if they're doing something unusual to the point where the D doesn't have enough SP's allocated to stop it, and their own Gold SA's don't impact it.

Then we had 2 balanced DEs & DTs, and a designated pass rusher at both positions. So basically, against balanced teams we'd rotate pretty consistently, but against pass only teams we could always have a pass rushing DT & DE on the field, and against run only teams we could always have a run stuffing DT & DE on the field.

4 DE: can be 2 of each or a 1-2-1, depending on your scheme.
3 DT: can be 2 Run and 1 Pass. If you add a S* DT, you're almost better off making him a pure Pass DT so he can play 95 snaps rather than a combo.
Going 4 DT is overkill for most teams (GA excluded).
The above allows you to use the 4 DL Depth Chart formations for Run Plays and 3 DL for Pass. You just need higher Heart and Comditioning on the Pass builds.
