I interpret the blocking interaction like this...I assume that all plays start with the DL rushing the QB then the OL engages into a block whether it be Pass Block or Rush Block and gets his block score and then the defender rolls either Pass or Rush block score determined by the type of block the OL engages with. As far as Blitz Awareness the DL/LB/CB is rushing towards the QB or in GLB2 a spot determined behind the QB and doesn't turn away from that target until he passes his Blitz Awareness roll.

There's not much else you can ask for except maybe for him to hold on for the ride. The DT does a nice job separating from the Guard. At the time of initial contact of the HB, the HB is in full south momentum while your DT is turning. As he is turning I am guessing his balance and strength is not the greatest due to the previous engagement with the Guard and the fact you are grabbing the side/back of the power HB.
The grip is definitely a very important skill, but I am sure it also works with energy, strength, balance, angle of the attack + momentum, etc. Let's not forget, the HB is a power back. If it were a speed back, the DT would have had a higher chance of a tackle or holding on.
None the less, you held on to him for a brief tick, after separation, the SS was already in the HB's face for a good stick. I would take this outcome every time.

Is bronze death grip suddenly supposed to be enough to tackle a ball carrier while shedding a block? Mr. Reliable fires, which would just cancel out the 1* death grip anyway even if the HB only has one star in it.

You won't make a play on a HB until you pass a blitz awareness check. Unless he runs right into you, in which case you have the ability to auto-pass and attempt a tackle.
You use your pass rush skills until you pass that check. If you're being run-blocked though, you'll pass the check as soon as the HB gets the ball in their hands.
