Here's what I'd like to see:
Keep in mind, even though you're watching games live, you're essentially watching a replay where you're in control of the forward/reverse button.
So, instead of doing full play-by-play, advance through plays faster with short or no comments after each.
Then, when big or noteworthy plays happen, you can replay it and colour commentate. At these points you can discuss why they worked (for the offense or defense). Pull up a Stream Team player build to show how certain stats/abilities helped on that play and why they're important. Talk about why that offense/defense play was good/bad and what you'd do differently ("The HB got through because this DE's Blitz Aware is too low and he didn't pick him up", etc). Or, just replay it because it was amazing and you want to see it again.
Basically, go faster through the small plays and expand on the big plays that need more attention and explanation. Maybe think of it like what the Manning-cast would do if they were watching a taped game versus live game.
Also, before the game starts, go through how you game-planned and why you made your choices using GLBScout. Then you can refer back to it showing why it worked or what you should have done differently if it didn't work.
What you're doing can be a great learning tool if you think of it as a teaching platform versus watching a live game where you have to do play-by-play.
