If the destination involves following a WR for 7 yards, then stopping and running back to follow on his hook (ya know, like practically every pass actually used), or involves running the 3 yards from your starting spot and then making a hard turn towards the ball carrier, quickness is way more valuable than that high top speed because in both those cases, or practically any of the cases that show up (except maybe deep posts or go routes...that nobody actually runs), acceleration to a decent top speed trumps the very high top speed.
BTW, I didn't just guess or randomly pull numbers for my example. I have a CB with a 32 Sprint, Conditioning, and Quickness and 25 Footwork. WR's don't get separation on hook routes anymore. I also have a CB with 54 Sprint, 30 quick, 30 conditioning but only 16 footwork. He's iffy at the start of plays, but can cover any WR I've come across even on deep routes. He also makes an excellent outside blitzer. And lastly, I have a stud blitzing LB (who racked up 11 sacks in his two games against you) who is at 35 sprinting, 30 quickness, and 30 conditioning.
