1) Yes I understand standard deviations, I've taken college level stat and am a mechanical engineer so I have my fair share of knowledge.
2) We didn't "flip heads" 10x in a row. We were frankly counting on you running a different defensive play which if run we would have probably scored upwards of 60-70 points. Given your playcalling history of how you attack run offenses and scouting MEM and seeing what we look like on glb2scout I'd say chances were probably 35-45% that you'd run that play. Even if you didn't run it chances are you were going to have some sort of edge blitzing either by your CBs or LBs so I would have taken the risk of trying that AI. We stood a better chance at flipping the script and taking a risk than running our usual offense and counting on ball control and a stingy defense to edge out a win.
