I absolutely detest steaks cooked in a skillet. You guys are friggin' nuts.

It is a hell of a lot easier to control the temperature on a skillet rather than the grill. The smoke and extra flavor from a grill can be awesome, but I've never eaten one from a grill that was seared or cooked better than what I can fix on a cast iron skillet. I like steaks that are seared at a very high heat initially, then cooked at a low heat over a longer period, then wrapped in aluminum foil and left to sit for about an hour. Of course, I set the smoke alarm off most of the times I do steaks, but it's worth it.

well, if i had an 1800 degree broiler at my house, i would do it that way.

difficulty of the cook has nothing to do with why i prefer a skillet when cooking a steak.

id take a grilling challenge against anybody.

That is how some of the most respectable chefs cook their steak, including Gordon Ramsey's. Make the skillet scorching hot, and cook each side until a nice crust develops. Then you throw it the oven and cook it until it is too the correct doneness.

you got me curious, so i looked up grilling in South Africa. http://en.wikipedia.org/wiki/Regional_variations_of_barbecue#/media/File:Braai_Boerewors.JPG

this contraption is exactly what my friend and i built for cooking whole pigs(baby ones). we welded rebar together to make a grilling basket, and we cook it over a cinder block fire pit rotating every 30 mins(it takes at least 2 people to flip it)

yeah, those things are cool. but, i dont do gas grilling.
