So on Saturday, the truck is catering for 600 people. It was originally for 550 until they bumped it at the end of last week. I ask, "So, what happened to bump the number up?". I am then told that almost 900 people RSVPed, but they figure a lot won't show. #clusterfuck

What you don't realize is that my "gut truck" is more like a Mega Food Truck, that is designed to serve over a hundred people an hour, and that is with people ordering from a menu and exchanging cash. Just pumping out food for a buffet, we can do a whole lot. The fryers are rated to do 150 pounds of food an hour, and I can cook 300+ burgers in that span.
