One regular who is not a family member, but I am replacing him. He has a rotten attitude. He doesn't drive and I not only pick him up, but pay him for that time, and he is just a miserable bastard all the time lately. The other day he refused to cook burgers anything less than well done...after being trained to cook them between medium and medium well with no objections.

I asked him to stop pressing on the burgers after the initial contact with the griddle and to only steam them for a few seconds to melt the cheese. I showed him the texture of recent batches and he said "I ain't leaving no blood, you can do the griddle". The next day I moved him to the fryer and tried to show him the color we want at each stage of frying, and he said "I have been around fryers for 20 years, I don't need training.".

I work with five people on a rotating basis. I have a regular weekday spot lined up, so he will be replaced with two people.

lol. it always amazes me how many people don't understand that it's fine to disagree with a supervisor, and it's fine to voice that disagreement, and even ask for a reason behind something you disagree with, but ultimately, there is a chain of command, especially if the supervisor in question is the fucking business owner

I suspect part of the problem is that he feels I have not worked my way through the ranks. Also, his work history and stories he has told suggest a lifelong aversion to supervision.

He also manages to be a "Sovereign Citizen" while receiving food stamps and living with his mom who drives him everywhere.

and if you want the burgers served raw it shouldnt matter to him

this is one route, some people will always be mistakes, individuals you never should have hired in the first place. Can't get around that without really helping the hiring process.

or, and this is where a lot of the culture type changes come into play, I would recommend you have some sort of 'playing to win' discussion with your larger team. Call it a family dinner and work through some basic items as conversational with a whiteboard or individual note pads.

A.G. Lafley wrote a book on playing to win and there are Harvard Business Review articles, but it's very big business. You can easily apply things down to a smaller level.

Start with a loose mission/purpose and define winning for not only the overall business but your individual employees. It's important to start with having them define winning for themselves. Then progress them to define winning for the business and finally link what they wrote originally to the business.

Help them see how they achieve personal success while also being a key component in the overall business's success. Think of it like a stool, and each leg is crucial to the business. They may not actually be true, but that's the belief you need the employees to hold. If they are removed, then the stool tips over and has to be picked up and repaired. Create accountability and expectations not just from a foofighter to employee level but an employee to employee level. Team driven expectations.

FYI, and I say this opportunistically because I was snatched up by an agency just under a year ago, but I've been paid good money to lead groups through the above. There's opportunities for people here to mildly b.s. there way in a door and then generate results (and of course payment) for easy consulting.

Playing to win is an excellent base for culture-based consulting as is polarity thinking (changing mindsets to be AND's instead of OR's).
