Statswise Str > Blk. Actually, I am not reall sure. If you are making them for someone who needs them or for your own team, I don't think Str is quite as important as most people make it but, I can see Blocking being much more valuable if they release more in depth O-Line stats.

All depends on the position IMO. Id tend to put str above blk for a guard since they'll be dealing with the high strength NTs and DTs. Im trying a few different linemen with different build focuses. . . its a bit boring cause stats are pretty close untill later levels.

Strength is the one that rolls better so thats the way it rolls for the first one to cap at 5th. I generally cap strength at the 5th (if it isn't already with natural gains) after blocking is to the 4th. Agility to th 68 is then seen. Confidence is then capped. I cap this before vision because it is a major stat for a G.

I was level 50+ on an LOT I have since retired, and we played around with moving all the equipment from strength to blocking. It was a disaster. We then spent the money to put it all back to strength. The problem we were repairing (giving up sacks to like leveled LDE's) was eventually fixed with confidence and MS VA's for most of our players. His morale was going in the tank. Once that was fixed he was pretty good but still destined for the scrap heap as he was my first player and had many flaws.
I created my guy in season 3 so whatever season he hit the 50's, not sure which. I think the DE's got a pretty nice sim boost that season.
