Firstly, VT hasn't played Wake in two years, VT won 27-6 in the 2006 season. Even in 2006, the Wake Forest offense mustered around 24 points a game with a high of 38 v Maryland (W) and a low of 6 v VT (L). Hardly a high powered offense to use as a judge of VT's defensive might.
Secondly, Wake has been to one New Years day bowl in the past million years (2006, loss to Louisville). They just aren't an impressive team - they are on the rise, but they are not impressive yet.
Which brings us to VT v Nebraska - beating VT will be a good move for you guys, but it is hardly a sign that you're "back." Getting rid of Callahan and picking up Pellini was a huge move in the right direction. Your games v Missouri and Oklahoma will be much bigger indicators of your place in the world than some crappy team out east. Yes, I called VT crappy.
