Mostly the reason it fails is because people are blitzing QB's set to scramble from both sides. Generally leaves you essentially a screen passer at best.

That's why you have the QB set his tactics not to rollout vs. blitzing teams. It'll take joint work between the OC and QB. People blitz less often the more teams age. The point is to not make it the staple of the offense, you'd still be running a base balanced offense mainly

That's not really true this season, and it was shifting even last season. The blitz is back in veteran again. You can really harass a QB into making a bunch of poor throws with good pressure now, and sacks are a thing that happen again too.

Not every team is built to pull it off though.

Still though, running a balanced offense this season has given me scope on how to deal with different types of defenses. I think it can still be pulled off as long as it isn't a main focal point of the offense

Goalline formation still works pretty well against GL defense.

GL defense is a very high risk/high reward defense. You sell out for the LOS stop. If you miss the play though, there's usually not much as far as layers on defense to contain a breakthrough.
