I promised cheese recs and here they are

American creameries are really starting to catch up to the europeans and some are making some great cheeses. I'll give two from the USA for this post. This isn't to say that a majority of the best cheeses around aren't from Europe but some of the American cheeses very much hold their own despite some old ignorant "purists" thoughts.

Cypress Grove and Cowgirl Creamery are amongst my favorites these days in terms of newish cheeses.

Cypress Grove is famous most for Humboldt Fog which is a very popular goat's milk cheese. It's really pretty to look at with the bloomy mold rind, and the soft, crumbly interior with vegetable ash around the outside and down through the middle. Tastes great with a sweet fig type spread on a thin sliced baguette. If you're a wine person, i'd probably go with a sauvigon blanc or another white wine

Red Hawk is a fantastic cheese. Creamy, flavorful and with a wonderfully stinky aroma. One of my favorites. Maybe a sweet desert wine or one a bit with floral notes would probably work best. Or any kind of cracker would be fine. One with a hazelnut kind of flavor would be interesting.

Cana de Cabra is a great goat cheese. Looks almost like a bucheron at first but a nice tangy goat's milk flavor with tangy citrus/woodsy notes you can feel in the back of your throat. Great in salads or paired with a salty ham like serrano

Can see how this can be taken the wrong way, but why do you know so much about cheese?

Cheese is good. *yum*

However, I'm a philistine and just eat basic cheese - sharp cheddar, brie, what have you.

If you like brie, you should check out Brie de Meaux. It's a really great brie. You might also like Robiola Due if i spelled it right. It's kinda similar to a brie in taste and texture but has a bit more depth of flavor with a mix of cow's and sheep's milk. Really great with various jellys/jams that people often pair with cheeses.

Sadly these days just about all I pair cheese with is celery. Stupid diabetes *grumble*
The robiola thingy sounds familiar, but who knows. The wife picked up some fancy cheese or another that was similar to brie a while back for us to try. It was pretty good.

Man, I need a snack.

Could've been saint andre or formaige de affinoi. Both have pretty wide distribution. Sucks about the diabeetus though.

Yea, it snowed up in mass like a month ago but then has been pretty mild since. Was like 65yesterday. Weird. I wish the mild weather would continue

Most cities will have some kind of nice cheese shop you can find. Also, Whole Foods has a great cheese selection as well if you have one of those
