I'm basically at the point of realizing that I may never get to build my ideal team - so I've decided to just wax philosophical about it. I'm not sure how much detail I'll go into with each position - but I'll at least layout the basics of what build types I think are best for each position.
And I'll start, with Defensive Tackles.
Defensive Tackles are one of the least rewarding defensive players to make. They are also make or break for a lot of teams without them realizing. The point of defensive tackles isn't to get stats, it's to control the offensive line. If you let them run free, they will block down on your LBs who cannot hope to have matching break block skills to their blocking skills. DTs are the barrier against second level blocks. Good DTs are looking to be in blocking interactions as little time as possible, and making them happen as often as possible. This means they need good quickness, decent mobility, and fairly high balance, and toughness to compensate for the large number of blocking interactions.
Tech-heavy DTs are probably best for your starters - tech works best as an all-around against all types of blockers and the high agility helps with their 'insistence' on getting into as many blocking interactions as possible. Power DTs make a better backup. Power works best as the game stretches on, when blockers are slightly less snappy in technique the power really shines, and they work better during pass rush situations late game. Power forces O-linemen in toward center, and bounces them further, making much better lanes for your DEs and LBs to get at the quarterback. This is big if you're gonna be blitzing, and still big if you want to maintain high levels of pressure from DEs that may have fading energy as the game progresses. They are also very good at ruining running lanes later in the game if you're fighting from behind.
