If I make a bunch of experienced players this weekend will they count towards my S* when they graduate to sophomore? Or is it too late?

In the offseason just have pickup players play in one game, convert to real player, and then "catchup".

Yep. You should run three pickup players at a time, and it would only take you 4 games to get the S* tier 3
But again, make sure you convert to a real player after the first game, since pickups can't be "caught up"

Yeah that's pretty brilliant. I do think ph33p has a valid point about the cost, but it is much less time consuming than having to do 360 pickup games before the season ends... and more for more stars.
