Which one is better? When I read their descriptions it sounds like they do the same thing. So I'm curious which one is regarded as more effective at helping make tackles.

I went with brick wall on my DBs just because their toughness cap is a lot higher than their grip cap is. I also like the ability to stop momentum without confirming the tackle. I think it depends on the position, but they're both good and have similar uses.

Eh. I think the more important things to help you decide are:
1) How high of toughness level and/or tackling grip level your player will have (ie d-line and players that get tons of tackles will need more toughness than, say, CBs)
2) Your player's position relative to how you expect your dot to make most of his tackles. Toughness affects front and side tackles. Tackle grip affects your rolls while being dragged, which usually means tackling from the side or from behind.
3) Other Bonuses: Tackles for loss and STICK tackles bring a little bit of a morale bonus for tacklers. For DTs, the vast majority of the tackles they'll make will be in a roughly five yard radius: 2 yards behind the line of scrimmage and three yards past it. If a DT also has Showboat and can give a nice boost to the rest of the team for TFLs, Brick Wall is really nice way to maximize these kinds of tackles since it reduces the carrier's ability to get yards after contact.
4) Location on the field: Is your dot often going to be the very last line of defense between a rusher and a big run being busted for 15-20 yards? Hanging on for dear life might be a better move. Does your player make most of his tackles assisted (you can check this in season stats)? If so, your player may not need Death Grip. Zone CB focusing on stopping outside runs? Brick Wall may make more sense since tackles will be made head-on.
