Here are some I use a lot.
2TE: BI TE Crosses
2WR: Double Back Out Up (TE)
3WR: SB TE Post (TE), SG WR Hook (TE)
Try some inside runs or offtackles on first down so you at least end up 3rd and 6-7 rather than 3rd and 10.
