I see several Legend players on Vet team rosters. I thought that once a player hit Legend, he is kicked off a Vet team?

Nope. As long as the player is signed before they hit legend they are able to stay on the team. Chem starts dropping pretty dramatically, though.
Technically, you can get 3 seasons as Vet without using a career boost. The 3rd season you'll start out good and suck later in the season as players reach 0 chem.
