So I am creating basically, AJ Green. I want to know 3 things. How should I continue my build, are Prime Time, YAC, and Head Fake going to help me, and how can I get him to catch the ball more vs hurried QBs (errant passes I assume), 1v1 50-50 passes, and well, in general. Help me realize this build to as much potential as it can get please.

Build to your Traits.

Maximize your Routes, invest in Vertical, and Quickness to start.

The build is closed to us, so we can't see anything.
Click the gear icon under his name. When you mouse over it, it will say "settings."
Inside the settings menu there will be a dropdown bar labelled "Attribute Sharing."
If you change it to "Everyone can view my player" it will make that specific players build open for everyone to view. We can help more once we can see what you've done. All of my player builds are open by the way if you want to peruse through some of them to get an idea of what attributes are more valuable than others for specific things.

Max out hands and CiT first. Being fast won't help of you cannot catch the ball.

And get Prime Time first. The other Abilities won't help until you get faster.

Also would he not be able to play on a rookie team?
Meaning that if I want actual stats, I must retire and remake instead of "Catch Up"?

If you want to play in rookie, you will need to retire him and recreate. Try to do it soon, so he can be signed to a team during the offseason.

I think you can do better. He needs more conditioning for one. Like 60 end build at least I think. You will never get quickness that high so quick feet might be better used on work horse for one. Also I for one don't believe you need that much awareness. See what it looks like at 4 and add the 3 points to confidence to help you catch caps maybe?

Take strength to 1, replace springboard with workhorse, Add the two points from strength to confidence and awareness.
Quick Feet isn't terribly useful for a WR, you won't be taking footwork past 35, and quickness probably won't go past 50, unless you subscribe to some of Xars views, but with a non S* you won't be able to afford Quickness that high if you plan on investing heavy into Route Elusiveness and Route Technique. You'll want to go lighter on the weight as well to make quickness, footwork, sprinting, and elusiveness cheaper.

Vertical and Diving don't do too much for a WR in this game, unlike in real life. So 30 Vertical is often enough, but WR's can get away with no investment in vertical whatsoever.

Just remember you will get 3 Cap Boosters over time (for free). This can add 15 points of cap space to one skill. (Or 3 skills 5 points)

So with your current build, you could Cap Boost Conditioning to 60 with even a 4 Stamina.

MHS is right in that you don't need Quick Feet UNLESS you're going super high Quickness.

And you want Max Height and Minimum Weight.
