Vertical seems to play a part mostly in PD / Anti-PD rolls (whether it's every throw or only when they jump in the sim is unknown, prob every play (at least a little, maybe more on errant throws) though since I do think DT/DE get bonuses to deflecting from vertical and they are often stuck in some kind of blocking or pass rush animation before they get a deflect)
Diving expands your tackle halo (how far away you can tackle somebody from) which is not really intuitive and your ability to dive for extra yards at the end of a rushing play.
Afaik those are the main two uses for each

Diving for a pass??? I put some on my receiver..saw his first ever diving pass today for a td.

I guess, but I don't think it's as big of a deal (in as many situations) as vertical when you're talking about receiving passes. It seems like they both have an offensive/defensive application, and it would seem kind of redundant/OP to make diving equally as good as vertical at it's offensive advantage while also giving you an extra offensive advantage (YAC) when you do get the ball.
Though I guess that's partially just trying to apply logic and we all know how well that works here

I see diving catches once or twice a game. I see vertical catches and attempts at least a half-dozen times a game.

If a corner goes to intercept the ball, there would be situations where he would both have to have a high vertical to jump up and reach the ball and he would also have to dive to intercept the ball if it was out of his reach.
Or if a QB over threw a wide receiver, he might have to also jump up to catch it as well as diving to reach it.

I've seen a cornerback dive and intercept a deflected pass, for what it's worth. No way I could go back and remember the sim and find the replay though. It was a situation where the receiver was double covered, and the first cover guy deflected it, and the second dove and caught it before it hit the ground.
